ZUCCHINI-TOMATO COMPANION
Ingredients
½ cup chopped onion
3 medium zucchini, sliced
2 medium-sized ripe tomatoes cut in wedges
½ teaspoon dried basil leaves or 11/2 teaspoons chopped fresh basil
Salt and pepper to taste
Preparation
Coat a nonstick skillet lightly with olive oil and place over medium heat. Cook the onion
and zucchini, stirring occasionally, until crisp-tender. Add tomatoes, basil, salt, and
pepper. Cook until the tomatoes are thoroughly heated.
This dish makes a great companion for almost any meal. You may also stir it into your
choice of any cooked, drained pasta.
